- Arrange chicken skin-side up in the pan; add entire garlic cloves; pour half of the remaining sauce over each thigh (1-2 teaspoons per thigh); bake for 40-45 minutes, until chicken is cooked through and juices run clear. Crispy, sticky skin is ideal.
- While the chicken bakes, simmer the remaining sauce in a small pot. Reduce heat to low and simmer, stirring occasionally, until sauce is reduced and thickened. Remove pot from heat when sauce reaches the rim of pot and repeat (about 6 minutes).
- Serve with leftover sauce, zest, and green onions (optional).

This classic French dish, chicken with 40 cloves of garlic, is quite popular. I dare guess it was because using that much garlic was still new and felt excessive. Even yet, 40 cloves of garlic in a casserole isn't unremarkable now. Garlic cloves roasted in their skins become sweet and caramelly as they simmer, like savory bonbons in their sticky wrapping, rather than emitting acrid heat. This is not a caustic meal. Ingredients:
- 2 x 15ml teaspoons normal olive oil
- 8 chicken thighs with the skin and bones still attached to them
- 1 bunch, or the equivalent of 6 spring onions
- a sprig or two of fresh thyme
- 40 unpeeled garlic cloves, which is around 3–4 bulbs' worth.
- 2 tablespoons of dry white vermouth or white wine, each measuring 15 milliliters
- 1½ teaspoons sea salt flakes or ¾ teaspoon pouring salt excellent grinding pepper
Preparation
- Heat the oven to 180 degrees Celsius. Add some salt, pepper, and a mixture of dried herbs to the chicken.
- Heat some oil in a large skillet and sear the chicken for around 10 to 15 minutes on each side.
- Remove the chicken from the oven and put it to the side.
- After adding the shallots, continue to simmer them down in the leftover juices for around five minutes while maintaining a low to medium heat.
- After adding the garlic cloves, proceed to cook them over low heat for around two minutes.
- After adding the vermouth or the white wine, continue to simmer the mixture over low heat until it has shrunk slightly.
- After adding the chicken, parsley sprigs, and tarragon, pour the chicken stock over the ingredients.
- Bake the chicken for 20 to 25 minutes.
- You can serve this dish with crusty bread and any vegetables you like.

Next, sear the chicken on both sides in the melted butter until a golden-brown crust forms and the chicken is cooked through. Take the chicken out of the pan and put it to the side for later. Parsley that has been freshly chopped should be used as a garnish for the chicken before serving. Serve atop rice or noodles, as desired. Recipe Tips This recipe makes a sauce that is not overly sweet, yet it is one of my favorites anyway. Consider preparing one of my other simple dinners if you aren't interested in that kind of thing or if you're searching for something with less sugar.

The thought of preparing chicken wings with garlic and Parmesan at home can sound challenging. But we have perfected our approach, which results in wings that are excellent every time. Before anything else, bake the wings in simply oil. If you've never prepared chicken wings before, the following rule might sound strange, but you shouldn't bake the wings with the sauce on them. Start preparing the sauce when the wings still have a few minutes of cooking time left. For these wings, all you need to do is combine melted butter, garlic, parsley, and Parmesan cheese in a combination and whisk it. After the chicken wings have finished cooking, transfer them to a big bowl, and then coat them with the sauce before serving.
