Since the majority of shrimp scampi recipes do call for wine, you are more than welcome to use any dry white wine that you would also like drinking along with your share if you would want to follow tradition (or if you are just looking for another great reason to crack open a bottle). Ingredients
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 shallot finely chopped
  • 4 cloves garlic minced (about 1 1/2 tablespoons)
  • 1 pound large raw shrimp peeled and deveined with tails on (fresh or frozen and thawed)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/4 cup low-sodium chicken broth or white wine
  • Zest of 1/2 lemon
  • 1/4 cup freshly squeezed lemon juice
  • 1 1/2 pounds zucchini noodles from about 4 medium zucchini
  • 1/4 cup chopped fresh parsley leaves
  • 2 tablespoons freshly grated Parmesan
Instructions
  1. Melt the butter and olive oil over low heat in a big saucepan. Cook the shallot for three minutes, or until it becomes tender. After thirty seconds, add the garlic. Add the shrimp, salt, red pepper flakes, and black pepper to the pan. The shrimp should be sautéed for three minutes, or until they are barely opaque.
  2. Pour the chicken stock into the bowl, then add the lemon juice and zest. The shrimp are done when they are completely opaque and have been cooked at a rolling boil for one minute. Stir together the zoodles and the parsley. Heat the shrimp and noodles in the garlic-lemon sauce until the shrimp are slightly opaque throughout. (The zucchini noodles may get mushy if overcooked.) Garnish with parsley and Parmesan. Assemble while the food is still hot.
