How to Make a Scampi Sauce with Healthy Shrimp
I make it a point to include vegetables into each and every one of my meals, with the notable exception of hearty salads that serve as the primary course. However, I often offer vegetables as a side dish rather than as the primary component of the dish.
However, after spending a good hour looking at magazine spreads that featured epic, vegetable-centric, farm-to-table dinners (including one that was created by the designer of my most recent impulse buy cookbook), I decided that it was time to amp up my vegetable game by making zucchini noodles.

Is there a never-ending supply of hand-crafted jars and ceramics in every barn, just waiting to be displayed on a Tuesday evening when the mood strikes? If that's the case, I have to admit that I'm a little green with envy—not about the cleaning, but about the supply.
The traditional recipe for shrimp scampi calls for the use of pasta, butter, lemon, further butter, garlic, and additional butter in its preparation.
This recipe for healthy shrimp is a simplified version of the meal that emphasizes the use of vegetables. I made sure to keep the essential components of the meal, such as garlic, lemon, Parmesan, and butter, but I adjusted the amounts of each one to give the dish a more pleasing equilibrium.
(As a side note, my Baked Shrimp Scampi and my Garlic Shrimp with Quinoa are two more healthy shrimp meals that were inspired by shrimp scampi.)
The most significant and obvious modification that I made to the traditional recipe for shrimp scampi was to replace the traditional pasta noodles with zucchini noodles, popularly known as zoodles, which I made by spiralizing zucchini using this tool. I am so excited to finally be a part of the Sprializer game, even if I only joined it not too long ago.
In addition to being a low-calorie and low-carb alternative to pasta, zoodles also complement a wide range of flavors, such as the abundant amounts of lemon and garlic found in this recipe for lighter shrimp scampi. Zoodles can be found in the spiralized form of zucchini, which is called a spiralizer.
Recipe alterations and variations
To Include Pasta If you are not quite ready to become a vegetarian but you still want to eat some pasta, you may use a blend of whole wheat pasta noodles and zucchini noodles in the same proportions.

Scampi cooked in wine and served with shrimp. In order to make this meal of shrimp scampi as palatable as it is nutritious, I changed the wine in the original recipe for chicken stock.
Since the majority of shrimp scampi recipes do call for wine, you are more than welcome to use any dry white wine that you would also like drinking along with your share if you would want to follow tradition (or if you are just looking for another great reason to crack open a bottle).
Ingredients
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 shallot finely chopped
- 4 cloves garlic minced (about 1 1/2 tablespoons)
- 1 pound large raw shrimp peeled and deveined with tails on (fresh or frozen and thawed)
- 1 teaspoon kosher salt
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1/4 cup low-sodium chicken broth or white wine
- Zest of 1/2 lemon
- 1/4 cup freshly squeezed lemon juice
- 1 1/2 pounds zucchini noodles from about 4 medium zucchini
- 1/4 cup chopped fresh parsley leaves
- 2 tablespoons freshly grated Parmesan
Instructions
- Melt the butter and olive oil over low heat in a big saucepan. Cook the shallot for three minutes, or until it becomes tender. After thirty seconds, add the garlic. Add the shrimp, salt, red pepper flakes, and black pepper to the pan. The shrimp should be sautéed for three minutes, or until they are barely opaque.
- Pour the chicken stock into the bowl, then add the lemon juice and zest. The shrimp are done when they are completely opaque and have been cooked at a rolling boil for one minute. Stir together the zoodles and the parsley. Heat the shrimp and noodles in the garlic-lemon sauce until the shrimp are slightly opaque throughout. (The zucchini noodles may get mushy if overcooked.) Garnish with parsley and Parmesan. Assemble while the food is still hot.
