Most small sauces are based on the principle of reduction; brew different liquids with flavors, wine, and herbs to meld, concentrate and balance their flavor and texture. This method is used to make a simple stock by unlocking the roast pan and enhancing its flavor with flavorful vegetables, stock, and spices. Pan gravy is created the same way when sautéed protein produces caramelized bits that stick to the pan along with the juices from the cooked items, whether meat, poultry, or fish. We don't want our tomato sauce and tomato puree to taste too sour either. Again, the goal here is to increase acidity, but in a balanced way. Wine is often used and easily incorporated into tomato sauce. Preferably a white wine like red does not add much acidity and can create an unpleasant color. Make sure to de-flavor the raw wine by boiling it for at least 5 to 10 minutes. Vinegar is a cook's best friend and one of the secrets to complex and exciting flavors. The key is to start with quality vinegar, which I discussed in Part 1 of this series, and make sure it's fully cooked. You should not feel the presence of vinegar in the dish, except for the complexity it leaves behind. If I use vinegar, I usually add it to a long-cooked sauce and at the beginning of cooking. Citrus fruit, usually lemon, will be used at the end of cooking, as the acidity of citrus can cook quickly. When you want the fresh taste of citrus, need a little boost of acidity at the end of cooking, or make a quick tomato sauce, lemon is perfect. Olives and capers are often used in tomato sauce. They add not only salt but also acidity. Umami is an earthy component; we often combine the taste with a great steak or a piece of cheese. It often contains meat added to the sauce itself, or pork bones, prosciutto ends, salt pork, sausages, or ground beef in the sauce during cooking. They all enhance the umami taste. Anchovy paste or parmesan rinds are secret weapons in tomato sauce. Again, no one will likely know they're there, but they'll be wondering why your sauce is so good!
