- 1 lb dried spaghetti (regular or whole wheat)
- 1/4 cup extra virgin olive oil
- 2 cloves garlic minced
- 1 large red onion, roughly chopped
- 1 sweet red pepper, roughly chopped
- 1 sweet yellow pepper, roughly chopped
- 1 large fennel bulb, roughly chopped
- 1 medium zucchini, roughly chopped
- 1 medium carrot, roughly chopped
- 1/4 lb button mushrooms, halved
- 1 small head cauliflower, roughly chopped
- 1 medium eggplant, roughly chopped
- 1 tablespoon Mutti® Double Concentrated Tomato Paste (Doppio Concentrato)
- 1 hot red pepper (pepperoncino, optional)
- 2 cans Mutti® Whole Peeled Tomatoes (28 oz., Pelati)
- 1 tbsp kosher salt
- 6 sprigs of fresh oregano
- freshly grated Parmigiano Reggiano (optional)
- Salt and pepper to taste
Instructions
- Finely mince the roughly chopped veggies in a food processor; put aside in a separate dish.
- In a large, heavy-bottomed soup pot, heat olive oil and sauté garlic and onion over medium heat until the onions are translucent. Stir in Mutti® Tomato Paste until it becomes slightly browned. Add the remaining veggies and heat, tossing often, until covered with oil and wilted. Reduce the heat to low and combine the Mutti® Whole Peeled Tomatoes with the other ingredients. Slowly simmer for 1 hour and a half, stirring often, until the sauce is quite thick and a deep color. Add a tiny quantity of water as required if the sauce turns too thick too fast. When the sauce is complete, leave it aside while you boil the pasta or refrigerate it overnight in an airtight container.
- Just before boiling the pasta, warm the sauce moderately. Cook the pasta in a large pot of salted boiling water until al dente. Drain the pasta, reserving 1 cup of the cooking water. Add the pasta that has been drained to the sauce and stir for two minutes over low heat, ensuring that the spaghetti does not cling to the bottom of the pan. If the sauce is too thick, add a few tablespoons of pasta water at a time. If desired, mound the pasta on the serving plate and sprinkle with freshly grated Parmigiano Reggiano cheese before serving.
- If preferred, add freshly grated Parmigiano-Reggiano cheese over the noodle mound and serve the veggie spaghetti bolognese immediately.
