Ingredients:

  • 1/2 cup extra-virgin olive oil
  • 6 individual garlic cloves
  • 1 medium onion, diced
  • One can of whole San Marzano tomatoes, measuring 28 ounces
  • One can of crushed tomatoes weighing 28 ounces
  • One tomato sauce can weighing 14 ounces
  • 2 teaspoons of paste made from tomato
  • 1 teaspoon of garlic powder or granules
  • 1 level teaspoon of powdered onion
  • 1/2 milligram of dried red pepper flakes crushed
  • Black pepper that has been freshly crushed and kosher salt
  • 1 piece of the rind from a Parmesan cheese, if desired
  • 1 sprig of basil

Directions: In a large saucepan set over medium-low heat, combine the olive oil and garlic cloves. Cook, stirring regularly, until the garlic is golden brown and tender, which should take about 6 minutes (do not let the garlic burn). When the cloves have achieved the desired level of browning, use a slotted spoon to remove them from the pot and set them aside. After the garlic has been cooked out of the oil, add the onion and continue to sauté it until it becomes translucent, which should take around 5 minutes. Crush the can of San Marzano tomatoes using your hands and add them to the saucepan. Next, fill the empty can with water and add that to the sauce. Mix in the granulated garlic, onion powder, and crushed red pepper flakes. Add in the crushed tomatoes, tomato sauce, tomato paste, and crushed tomatoes. Add little salt and pepper before serving. After the garlic cloves have been browned, set them aside and mince them before adding them to the sauce. Mix in the rind from the Parmesan cheese, if using it, as well as the basil sprig.
