The New England penne Pasta macaroni Company's foundational ideas were hatched in 1984 at Francesca's, an Italian restaurant in Shelburne, Vermont, a town outside of Burlington. They were interested in gaining knowledge about all facets of the restaurant industry, such as working behind the bar, in the kitchen, and in bookkeeping. They had previous experience in the hospitality industry, having worked as servers for a number of years, including during their time as students at the University of Vermont. My curiosity was peaked in this aspect of the company in especially since it was carried out in a discreet space just off the restaurant and involved the creation of fresh pasta and ravioli. They used some very specialized equipment, which they were instructed on how to operate, in order to create ravioli and pasta.
