- 3/4 teaspoon ground cinnamon
- 3/4 cup soy, oat, almond, or cashew milk (180ml)
- 1 tablespoon freshly squeezed lemon juice
- 1/2 cup CANE SUGAR (100g)
- 1/2 cup lightly packed brown sugar (100g)
- 1/3 cup AVOCADO OIL (80ml)
- 1 1/2 cups grated zucchini, pressed gently with paper towels or cloth to remove some moisture (145 g)
Instructions
- Prepare an 8.5-by-4.5-by-2.75-inch greased or oiled nonstick loaf pan and preheat the oven to 350 degrees Fahrenheit.
- In a large bowl, combine the flour, baking powder and soda, salt, and cinnamon.
- Vegan milk and lemon juice should be combined in a separate bowl. Please let it a moment to settle. Sugars and oil should then be mixed. Whisking the liquids together is necessary.
- Combine the liquid and dry ingredients by combining them with a spoon or spatula. When there are no longer visible flour streaks, the mixture is ready for the zucchini to be folded in (some little clumps are OK).
- Pour the batter onto a baking dish to prepare it for use. Wait 50 to 55 minutes, or until the surface is golden brown and set. After 45 minutes, examine the bread to ensure that it is not burning or cooking too quickly.
