How does a hazelnut grow? Hazelnut grows in bushes 2-5 meters high, sometimes higher than trees. The flowering period and the first part of pollination of hazelnut bushes falls on winter. For example, in Italy, hazelnuts grow especially well in hot and humid climates, but they also grow in Turkey, France, Greece, Spain and the United States. Hazelnuts are harvested in Italy from September to October. How are hazelnut kernels harvested? Hazelnuts can be harvested in a variety of ways. Wait until the nuts are taken off the bush before you can pick them off the ground. The collection is done by hand or with the help of vacuum cleaners and pickers who clean and then collect the nuts. Another option is to use a vibrating device that grabs a branch of the bush and shakes the beads off the bush. The third method is hand picking, but this method is only effective up to a certain bush height. This method is often used in steep or uneven growing areas. For the first two methods, it is important that the floor is already cleared of branches and leaves. How are hazelnut kernels processed? Once harvested, the nuts are often left to dry in the sun on a tarp for several days. However, in some cases this step is only performed in silos after washing and the nuts are dried to the desired moisture content over several days. The granules are then sorted into different sizes. Sometimes by hand or with vibrating screens or drum screens that punch holes of various sizes and sort automatically. The nuts are then cracked with rollers after or just before transport, leaving the brown seed coat surrounding the kernel intact as it does not damage the kernel. This indicates that the nut should be roasted according to its origin, humidity and size. It brings out the flavor of roasted hazelnuts as much as possible.
