- To break up the dates into smaller pieces, use a whisk
- (If you are going to use a vanilla bean, cut it in half lengthwise, scrape the vanilla seeds out, and then add both the bean and the vanilla seeds to the milk mixture)
- Adjust the consistency of the egg mixture by adding some of the milk, dates, and vanilla
- Once you've done that, transfer the mixture back to the saucepan and continue to simmer it while stirring it constantly until it thickens
- Temperatures ought to reach 170 degrees Fahrenheit
- Take away from the heat
- Mix in the cream
- Place in the refrigerator for the night to chill

Ingredients:
- Half a cup of granulated sugar
- One cup of water
- Seven ounces of whole dates that have had the pits removed, and a teaspoon of Kosher salt
- 1 cup of undiluted milk
- 2 cups of heavy cream, divided into 5 egg yolks, which have been lightly beaten
- A half a cup of chopped walnuts (optional)
Directions
- Put the water and sugar into a medium-sized pot and bring the mixture up to a boil
- Maintain a boil for the remaining time necessary for the sugar to completely dissolve, stirring the mixture regularly
- After adding the dates and the salt, continue boiling for another three minutes
- Take the pan off the heat and let the dates sit for five minutes so they can cool down
