If you are going to make your dough from scratch, nothing is stopping you from creating it in advance and storing it in the refrigerator until you are ready to put the pizza together.

To dry out the tomatoes, preheat the oven to 250 degrees Fahrenheit and bake them for about an hour.
Transfer the tomatoes to a container after they have reached room temperature.
Add some extra olive oil to the top, then cover the container and place it in the refrigerator.
