Like you, I always associate Ferrero Rocher with the holiday season. Most likely because I always find myself eating my way through a box around the holiday season (and only sharing if necessary!).
I made a vegan Ferrero Rocher (also known as chocolate hazelnut truffles) because I've already uploaded "healthier" veganized candy treats like my vegan Twix bars, Snickers, peanut butter cups, and bounty bars (Mound bars for Americans).
The classic Ferrero Rocher comprises a crisp wafer shell, a soft chocolate hazelnut ganache center, and a hidden hazelnut center all covered in a chocolate and hazelnut coating.
But standard types frequently contain a lot of sugar, dairy, and wheat (in the wafer). Contrarily, the ingredients in this recipe for Ferrero Rocher are a straightforward, wholesome hazelnut butter and chocolate truffle mixture encasing a hazelnut kernel and topping with a hazelnut coating (with optional dark chocolate coating).
Surprisingly, these vegan truffles also contain a variety of healthy ingredients. Hazelnuts and coconut milk, for example, are abundant in vitamins, minerals, and healthy fats.
Meanwhile, cacao's antioxidant qualities are abundant in dark chocolate. After all that, how could you possibly refuse? I've recently grown to enjoy "healthier" chocolate treats like healthy chocolate fudge. Even a chocolate hummus for dessert was my creation!
Best of all, once made, the Ferrero Rocher balls may be frozen for three to four months or kept in the fridge for up to a week! Place one (or three) on the counter then, ten to fifteen minutes before eating, and enjoy it as a quick dessert or snack (I do the same with my vegan-filled chocolates).

FERRERO ROCHER VEGAN COMPOSITION
There are only seven ingredients (plus salt) required to make Ferrero Rocher sweets at home:
TRUFFLES MADE OF VEGAN HAZELNUTS
You'll need uncooked hazelnuts (we will toast them ourselves). In the vegan truffle mixture itself, as a kernel inside each truffle, and as a covering for the truffles, these will all be employed.
I make my dark chocolate at home (I have a straightforward vegan dark chocolate recipe as well as bean-to-bar chocolate I've produced).
For the best mouthfeel and texture, cacao butter is necessary. Coconut oil should work in its place if cacao butter is not available.
Be careful when purchasing canned coconut milk with a high-fat level. Because this is creamier and thicker than typical dairy-free milk, you can, if necessary, replace it with dairy-free cream.
You can use any liquid sweetener in place of maple syrup, including agave, brown rice syrup, etc. You could use honey (even vegan dandelion honey!) if you're not vegan. Please be aware that every change will affect the flavor.
Vanilla: I manufactured my vanilla extract. The best flavor and outcomes come from using a natural extract.
Instant coffee: To enhance the depth of flavor without adding a coffee flavor, I like to add a small bit of instant coffee to chocolate delicacies. You can remove this or substitute a decaf version if necessary.
Similar to coffee, adding a dash of salt to any chocolate treat brings out and harmonizes the taste.
Other modifications and additions
Other coatings: You can experiment with different coatings, like the ones I used for these vegan almond protein balls, provided you don't mind the "Ferrero Rocher" feelings.
The wafer shell, which adds crunch, is the only part of these Ferrero Rocher balls that is absent. This does not, however, restrict the Ferrero Rocher recipe from including a crunchy ingredient.
I advise using quinoa or rice that has been puffed (you could also use puffed rice cereal, but it has more sugar). They can be used in place of or in addition to the hazelnut topping that has been crushed.
HOW TO MAKE A FERRERO ROCK ROCHER (HAZELNUT TRUFFLES)
Prepare the hazelnut butter in Step 1
The hazelnuts should first be spread out on a large baking sheet and roasted for 15 minutes at 325°F/165°C (with a fan).
You can create "raw truffles" by skipping this step and using raw hazelnuts instead. But when they're roasted, I like the flavor better.
The nuts should be placed in a high-speed blender or food processor and blended into a thick nut butter after cooling for a few minutes. The hazelnut butter will become smoother as you mix it more, but we don't want it to go too runny. Therefore, turn off the machine once the batter has thickened.
In STEP 2, add the other ingredients.
Over a double boiler or in the microwave, melt the chocolate and cacao butter (or coconut oil) until they are completely smooth (in 10-15 second increments to prevent burning). Next, add the other ingredients to the blender and blend/process them until well-combined.
Place the mixture in the refrigerator to cool and set for 15 to 30 minutes. Allow it to chill for a little while longer if it is still too soft after that time. Avoid overchilling to avoid having trouble scooping and shaping the vegan truffles.
Roll the vegan truffles in step three.
Make balls out of the hazelnut truffles next. To make equally sized balls, use a small melon baller (as I did), a measuring spoon, or a small ice cream scoop.
I used a spoonful two of each truffle. Depending on the desired size of the truffles, you can slightly alter this. This mixture produced 24 truffles.
Each truffle should have a full hazelnut kernel in the center. After that, wrap the mixture over the hazelnut and roll each truffle into a ball with your hands.
Each truffle is coated by rolling it in a tiny dish of ground hazelnuts.
MATT THE DESSERT TRUFFLES (OPTIONAL)
You can cover each homemade Ferrero rocher truffle in dark chocolate to make them even more opulent. Melt a little extra dark chocolate to achieve this.
Each vegan truffle should be covered in melted chocolate (I lower them into the bowl with a fork). Next, carefully stir in the hazelnuts that have been crushed.
Allow the excess chocolate from the truffles to drip off. The vegan hazelnut chocolate truffles should then be placed back on the dish and in the fridge to properly firm before being eaten or stored right away!
Alternatively, you might mix the melted chocolate with the chopped hazelnuts.
STORAGE METHODS
Any extra Ferrero Rochers can be kept in the fridge for up to seven days in an airtight container.
I like to place the vegan chocolate truffles on a large pan and freeze them until they are firm, leaving room between each truffle. After that, store for up to four months in a freezer-safe container or bag.
Simply take a truffle out of the freezer for 10 to 15 minutes to savor when you want to taste one.

CAN I use hazelnut butter that I buy from the store?
The problem is that it might be too liquid or thin and affect how the vegan truffles are made. I advise reducing the amount of dark chocolate used in the truffle mixture and replacing the additional "liquid" with a little amount of cacao powder if you choose to use store-bought hazelnut butter.
IS IT POSSIBLE TO USE MILK CHOCOLATE AS A TOPPING?
But you must use your favorite dairy-free brand if you want to keep this dish vegan.
CAN YOU MAKE THESE KETO-FRIENDLY TRUFFLES?
You would need to swap out the sugar with a keto-acceptable alternative to categorize these vegan truffles as keto. I've never used a powdered sweetener, and I'm not aware of any liquid keto sweeteners that are comparable to maple syrup.
To achieve the desired consistency if you only have one coconut, you might need to add a little bit more coconut milk. A keto-friendly chocolate bar or sugar-free dark chocolate must also be used.
CAN YOU USE SKINLESS/SKINLESS HAZELNUTS?
In this recipe, either item would be suitable. In reality, because the "bitter" peel has been removed, some people prefer to use blanched hazelnuts in sweet delicacies.
I advise doing it after the nuts have been roasted if you want to remove the skins. To get the nuts' skins off, vigorously rub them with a kitchen towel (similarly to how I do for this homemade hazelnut butter).
CAN I USE OTHER NUTS?
You can use another nut in place of the hazelnuts in the Ferrero Rocher/hazelnut truffles even though they are no longer vegan (or creamy nut butter). For a recipe for delectable vegan truffles made from nuts, I suggest cashews, almonds, or peanuts.
NOTES FOR RECIPES AND FAQs
I suggest stacking the truffles in miniature cupcake liners (like Ferrero Rocher from the shop) and setting them in a pretty container.
You may add numerous layers of crunch to your homemade Ferrero Rocher if you choose to swap out the wafer with a crunchy ingredient.
To do this, immediately roll the finished truffles in a fine layer of puffed quinoa/rice that has been crushed. Allow the refrigerator to settle for a few minutes. You can then coat them in melted chocolate and chopped hazelnuts, quinoa, or rice puffs.
If you are having problems dipping the hazelnut truffles, you may smooth out the melted chocolate by adding a tiny bit of coconut oil. To get the chocolate back to its dipping consistency, you might need to remelt it.
