Reduce the heat to maintain a medium simmer and continue to cook, tossing the tomatoes regularly and lightly smashing them with the back of a spoon until droplets of fat appear on the top of the tomatoes, which should take approximately 45 minutes. Take off the onion's skin and throw it away.
