Coming from a West African background, groundnut soup (also known as peanut soup or stew) was a favorite dish of mine when I was a kid.
My mother prepared this soup by combining a number of different kinds of meat and fish.
But ever since I stopped eating animals, I've been craving this meal more than ever before.
As a consequence of this, I committed myself to create a vegan version of the traditional African peanut soup that is just as flavorful.

When I was attempting to cook a traditional African supper, I experimented by first sautéing the veggies in the soup pot before adding the rest of the blended components.
It would appear to function as advertised while simplifying the cooking procedure.
This is a stunning example of authentic African cuisine, but the method by which I prepared it is strikingly similar to the methods by which we prepare our vegan cauliflower and potato curry and our vegan white sauce fettuccine with leeks and mushrooms.
In each of those recipes, the sauce, or in this case, the soup mix, is prepared in the blender.
I carried out a number of test runs in order to get the required level of consistency.
The fact that this dish may be prepared in a very short amount of time and in a substantial amount explains why I like eating it so much.

Ingredients
1 cup of jasmine rice, rinsed and drained Clean and measure out 1 tablespoon of vegetable oil, 1 tablespoon
1 big onion, 4 courgettes or zucchini, and 1 pumpkin, chopped into chunks, all medium-sized.

Instructions
Prepare the jasmine rice in accordance with the instructions provided on the package.
However, add an additional half-cup of water to the recipe.
Put the oil and onion in a big saucepan and cook it over low to medium heat until it begins to boil.
This should take around five minutes.
Add the pumpkin and zucchini to the pan after you have sliced them into thin wedges using a knife.
In a blender, each of the ingredients for the soup mix should be processed until it is completely smooth.
It is important that the veggies and soup ingredients be well mixed together.
Continue cooking the soup for another half an hour over low to medium heat, stirring it often, until it begins to acquire a thicker consistency.
Combining and mashing the rice with a serving spoon will result in the rice having a smooth consistency.
Large quantities of rice are scooped up with a spoon, and thereafter the rice is shaped with the hands into balls.
Make use of drops of cold water in order to connect the balls together.
One rice ball should be placed in the center of each plate, surrounded on all sides with soup.
