Of course, we also have Capellini macarons, which resemble angel hair macarons and are another variety. The difference between the two venerable varieties of Italian pasta, Capellini and Angel hair, is measured in micrometers. Thin pasta comes in the form of pasta capellini. Similar to conventional spaghetti, it is made of cylindrical noodles that have been divided into 12-inch strands. While the Italian phrase meaning "small thread" gives lengthy strands of spaghetti its name, Capellini really means "little hair." The ideal spaghetti is made using angel hair pasta, or Cappelli D’Angelo as it is known in Italy. When cooked, angel hair is reputed to freeze and soften. For optimal results, drain the pasta from the boiling water about a minute or so before it turns al dente, then add it right away to the sauce. The main distinction between the two forms of pasta is their width: angel hair has a diameter between 0.78 and 0.88 mm, whereas capellini has a diameter between 0.85 and 0.92 mm. Only 140 micrometers separate the thinnest angel hair pasta from the thickest Capellini pasta.
